An iconic Sanjo vegetable knife engineered for effortless precision. Forged by legendary blacksmith Yoshikane Hamono, this 165mm Nakiri features an SKD semi-stainless core, a subtle Nashiji ("pear skin") finish, stainless cladding, and a warm, octagonal olive wood handle.
Key Features
-
SKD Semi-Stainless Core Steel: Hardened to 63-64 HRC, SKD tool steel offers incredible edge retention and cutting feel similar to high-carbon steel, combined with low-maintenance semi-stainless properties.
-
Signature Sanjo Convex Grind: Meticulously hand-ground thin behind the edge with a gentle distal taper, allowing the blade to glide through dense vegetables like butternut squash and carrots without wedging.
-
Rustic Nashiji Finish & Stainless Cladding: The upper portion of the blade features a matte Nashiji (pear-skin texture) finish, protected by fully stainless outer cladding for easy maintenance and food release.
-
Flat Nakiri Profile: Designed specifically for push-cutting, chopping, and slicing vegetable prep. The tall blade height provides ample knuckle clearance at the cutting board.
-
Ergonomic Olive Wood Handle: Outfitted with an octagonal (Hakkaku) natural olive wood handle, featuring rich grain variations that provide a comfortable, secure grip.

Care Instructions & Maintenance
-
Hand Wash Only: Never put this knife in a dishwasher. Wash by hand with warm water and mild soap, then dry thoroughly immediately after use.
-
Semi-Stainless Edge Care: While the cladding is stainless, the exposed SKD core at the cutting edge is semi-stainless. It resists rust better than carbon steel but can stain if exposed to acids or moisture for extended periods.
-
Avoid Hard Foods: Do not cut bones, frozen foods, nuts, or seeds, as the thin edge geometry can chip. Use only on soft wooden or synthetic cutting boards.
-
Sharpening: Sharpen on Japanese water whetstones. Avoid pull-through sharpeners, ceramic rods, or electric grinding wheels.
