A breathtaking synthesis of modern metallurgical performance and vivid visual craftsmanship, this 210mm Kiritsuke Gyuto reimagines the celebrated Ryuhyo (drift ice) series with an iridescent flair. Built around a surgical-grade SG2 powdered metallurgy core, the undulating multi-layer Damascus cladding is treated with a specialized rainbow coating process that refracts light into shifting hues of bronze, gold, magenta, and electric violet—reminiscent of polar sunlight reflecting across sea ice. Paired with a versatile Kiritsuke K-tip and an ergonomic octagonal olive wood handle, this knife delivers effortless cutting glide, surgical tip work, and head-turning presentation.
Key Features
-
SG2 / R2 Micro-Carbide Powder Steel Core: Hardened to 62–63 HRC, this powdered metallurgy steel core provides extraordinary wear resistance, long-lasting edge retention, and smooth resharpening capabilities while remaining completely stainless.
-
Prismatic Rainbow Damascus Finish: The multi-layered stainless Damascus cladding undergoes an advanced electrolytic surface treatment, creating a dynamic spectrum of iridescent tones across the blade flats while leaving the exposed cutting core apex bright and razor-sharp.
-
Versatile Kiritsuke (K-Tip) Profile: Blends an extended, flat chopping zone with an acute reverse-tanto tip, granting surgical precision for delicate score work, horizontal garlic/shallot cuts, and protein trimming alongside everyday slicing.
-
Convex Grind Behind the Edge: Hand-thinned by skilled Japanese sharpeners to minimize friction, eliminate wedging in dense root vegetables, and facilitate smooth food release.
-
Octagonal Natural Olive Wood Handle: Hand-fitted with an octagonal (Hakkaku) handle carved from dense natural olive wood, offering warm visual character, natural resistance to moisture, and neutral balance for both pinch and handle grips.

Care Instructions & Maintenance
-
Soft Sponge & Hand Wash Only: Gently hand wash with warm water and mild dish soap. Never use abrasive sponges, scouring pads, steel wool, or acidic cleaners, as they will scratch or dull the specialized rainbow Damascus finish.
-
Dishwasher Prohibition: Never clean this knife in a dishwasher. The harsh detergents, high heat, and violent water spray will degrade the olive wood handle and permanently damage the blade coating.
-
Prevent Chipping: Do not use this knife to cut through bones, frozen foods, nutshells, or dense squash rinds. Cut exclusively on end-grain wood or soft rubber cutting boards to preserve the fine edge.
-
Sharpening: Sharpen on fine Japanese water whetstones (1000–6000 grit). Do not use electric sharpeners, steel honing rods, or pull-through sharpeners, as they will scrape away the rainbow finish along the sides of the blade.
