A harmonious balance of modern metallurgy and dynamic optical artistry, this 210mm Gyuto brings the celebrated Ryuhyo (drift ice) pattern into a vibrant spectrum of shifting color. Powered by an ultra-hard SG2 powdered metallurgy steel core, the multi-layered stainless Damascus cladding undergoes an advanced electrolytic rainbow coating process that casts iridescent shades of violet, gold, copper, and blue across the undulating steel waves. Crafted into the quintessential 210mm Japanese chef’s knife profile and paired with an ergonomic octagonal olive wood handle, this knife delivers nimble versatility, effortless glide, and exceptional visual presence.

Key Features

  • SG2 / R2 Micro-Carbide Powder Steel Core: Hardened to 62–63 HRC, this powdered metallurgy steel core provides surgical apex sharpness, incredible wear resistance, and long-lasting edge retention while remaining fully stainless and responsive on water stones.

  • Prismatic Rainbow Damascus Cladding: Multi-layered stainless Damascus steel treated with a specialized surface technique that refracts ambient light into an iridescent rainbow gradient, highlighting the flowing ice-drift pattern while leaving the core edge bright and uncompromised.

  • Agile 210mm Gyuto Profile: The benchmark standard for multi-purpose kitchen prep—featuring a gentle belly curve for rock-chopping, push-cutting, and slicing through meats, fish, and vegetables with fluid agility.

  • Hand-Ground Thin Geometry: Ground thin behind the edge by skilled Japanese sharpeners to reduce friction, prevent wedging in dense root vegetables, and deliver smooth, clean separation.

  • Octagonal Natural Olive Wood Handle: Hand-fitted with an octagonal (Hakkaku) handle carved from dense olive wood, providing natural moisture resistance, distinct flowing wood grain, and comfortable balance for both pinch and handle grips.

Care Instructions & Maintenance

  • Soft Sponge & Hand Wash Only: Wash gently by hand using warm water and mild dish soap. Never use abrasive scrubbers, steel wool, or harsh acidic cleansers, as they will scratch or wear away the rainbow Damascus finish.

  • Dishwasher Prohibition: Never clean this knife in a dishwasher. Intense heat, harsh caustic detergents, and violent water spray will degrade the olive wood handle and permanently damage the blade coating.

  • Prevent Chipping: Do not cut bones, frozen ingredients, shells, or dense fruit pits. Always use soft end-grain wooden boards or Japanese synthetic rubber cutting mats to protect the thin cutting edge.

  • Sharpening: Sharpen on Japanese water whetstones (1000–6000 grit). Avoid honing steels, pull-through sharpeners, or motorized wheels, which can alter the blade profile and scrape away the rainbow finish along the blade face.
