A striking blend of high-speed powdered metallurgy and vivid arctic aesthetics, this 180mm Bunka brings the celebrated Ryuhyo (drift ice) pattern into a nimble, multi-purpose profile. At its core lies ultra-hard SG2 powder steel, enveloped by multi-layered stainless Damascus cladding treated with an electrolytic blue finish that evokes glacial oceanic currents shifting beneath sea ice. Featuring an acute reverse-tanto (K-tip) profile, generous knuckle clearance, and an ergonomic octagonal olive wood handle, this knife delivers lightning-fast push-cutting, surgical scoring, and remarkable visual distinction.

Key Features

  • SG2 / R2 Powder Metallurgy Core Steel: Hardened to 62–63 HRC, this micro-carbide powder steel core delivers laser-sharp apex cutting performance, exceptional wear resistance, and extended edge retention while maintaining full stainless rust resistance.

  • Specialized Blue-Coated Damascus Cladding: Multi-layered stainless Damascus cladding treated with an advanced blue surface finish, producing deep azure and indigo contrasts along the shifting wave pattern while leaving the core cutting edge bright and razor-sharp.

  • Agile Bunka Geometry & K-Tip: The acute, triangular reverse-tanto tip excels at horizontal scoring, garlic/shallot mincing, and delicate protein trimming, while the flat midsection and tall heel provide ample knuckle clearance for push-cutting and board-to-pan ingredient transfer.

  • Convex Grind Behind the Edge: Meticulously ground thin behind the cutting edge by skilled Japanese sharpeners to reduce drag, prevent wedging in dense produce, and ensure smooth food release.

  • Octagonal Natural Olive Wood Handle: Hand-fitted with an octagonal (Hakkaku) handle carved from dense natural olive wood, offering natural moisture resistance, distinct flowing wood grain, and comfortable control for both pinch and handle grips.

Care Instructions & Maintenance

  • Soft Sponge & Hand Wash Only: Gently wash by hand using warm water and mild dish soap. Never use abrasive scrubbers, steel wool, or acidic cleansers, as they will scratch or wear away the blue Damascus finish.

  • Dishwasher Prohibition: Never clean this knife in a dishwasher. Extreme heat, caustic detergents, and high-pressure jets will degrade the natural olive wood handle and permanently damage the blade finish.

  • Prevent Chipping: Do not use this knife to cut through bones, frozen ingredients, shells, or dense fruit pits. Always use soft end-grain wooden boards or Japanese synthetic rubber cutting mats to protect the thin edge.

  • Whetstone Maintenance: Sharpen exclusively on fine Japanese water whetstones (1000–6000 grit). Avoid honing rods, pull-through sharpeners, or motorized wheels, which can alter the blade profile and scrape away the blue finish along the blade face.
