Forged in Hirosaki, Aomori Prefecture, by the historic Nigara Hamono smithy—a foundry with over 350 years of sword-making heritage—this 210mm Kiritsuke Gyuto is a striking statement of raw industrial beauty and cutting performance.

Featuring a distinctive k-tip profile combined with a dark kurouchi (blacksmith) finish and precise hexagonal tsuchime (hammered) facets, the blade channels light along its flanks while creating air pockets that drastically reduce food drag during push-cuts and precision slicing.

Blade & Materials

  • Core Steel: Micro-carbide SG2 (R2) powdered high-speed stainless steel hardened to 62–63 HRC. Known for exceptional edge retention, intense sharpness, and resistance to corrosion.

  • Finish: Traditional protective dark kurouchi skin layered with hand-hammered hexagonal tsuchime facets.

  • Handle: Premium figured Desert Ironwood—one of the densest and most stable hardwoods in the world—crafted into a comfortable ergonomic handle for flawless control.
