Our Story

Where Japanese Heritage Meets Bespoke Craftsmanship

At the intersection of ancient metallurgical tradition and exacting modern culinary performance sits the Japanese kitchen knife. We were founded on a singular obsession: to connect discerning chefs, passionate home cooks, and dedicated collectors with authentic, heirloom-grade cutlery forged by Japan’s most revered blacksmithing houses and independent artisans.

A knife is never merely an everyday kitchen tool. In the hands of a master craftsman, it is an extension of culinary intent—a harmony of steel geometry, distal taper, balance, and human touch.

The Lineage of the Forge

Our catalog is deliberately curated, prioritizing provenance, metallurgical purity, and master-level handcraft over mass manufacturing. We work directly with generational workshops and visionary smiths across Japan’s historic cutlery epicenters—from the 350-year forging legacy of Hirosaki’s Tsugaru region to the sacred sharpening workshops of Sakai and the modern masterworks forged in Hiroshima:

  • Shoichi Hashimoto: Exhibition-grade Mizu-Honyaki and complex grain-flow Damascus blades forged from pure Hitachi Shirogami #1 carbon steel.

  • Nigara Hamono: Cutting-edge micro-carbide powder steels (SG2/R2) blended with tactile Tsuchime hammerwork and razor grinds.

  • Akazawa: Flawless Kyomen mirror polishes, aggressive sword-tip Tsurugi profiles, and refined Takefu VG10 geometry engineered for uncompromising sashimi work.

  • Artisan Masayuki Hamono: Benchmark core steels and surgical grinds honoring classical Sakai-uchi-hamono heritage.

Each blade that passes through our doors is inspected for grind symmetry, straightness, and bevel geometry, ensuring every piece cuts with effortless authority straight from the box.

The Art of the Wa: Customization from Tang to Tip

True culinary tools are deeply personal. We believe that a blade's balance, reach, and aesthetic should reflect the unique grip and rhythm of the individual wielding it.

Beyond fully assembled master cutlery, we champion the culture of custom knife building and traditional re-handling. Our Bare Blades & Custom Handles workshop supplies bare, unhandled blades alongside hand-turned octagonal (Hakkaku) wa-handles carved from natural black ebony, figured rosewood, hard maple, and Japanese magnolia (Ho wood), capped with authentic water buffalo horn ferrules.

Whether pairing an unhandled SG2 Gyuto with a custom tiger-horn ferrule or restoring a treasured heirloom blade, we empower knife enthusiasts to curate tools balanced specifically to their palms.

Our Commitments

Authentic Provenance

Every knife and handle component in our collection is 100% handcrafted in Japan. We honor the craftsmen by celebrating their individual techniques, metallurgy, and workshop stamps without ambiguity or white-label shortcuts.

Metallurgical Transparency

We believe an informed knife owner is a lifelong steward of the craft. We provide detailed specifications for every knife—including core steel alloys, Rockwell hardness (HRC), blade grind geometry, and exact handle mortise dimensions.

Functional Heirlooms

We do not stock disposable cutlery. Every forged blade and carved handle is chosen for longevity, designed to take a screaming-sharp edge, endure decades of prep, and be passed down as a functional piece of culinary art.
